Try this simple lunch with some crusty bread.

Wine Suggestion: A good, salty Pazo de Señoráns Albariño which plays a delightful dance of balancing a lightness and elegance with surprising depth, concentration and complexity.

Hot-smoked salmon salad with chive buttermilk dressing – serves 2

  • 2 Little Gem lettuces, cut into chunky pieces
  • 50g sugar snap peas, halved
  • 1 small red onion, finely sliced
  • 2 tbsp capers
  • 150g hot-smoked salmon
  • crusty bread, to serve

FOR THE DRESSING

  • 100ml buttermilk
  • 1 tbsp white wine vinegar
  • a pinch of caster sugar
  • a bunch of chives, finely chopped

Put the buttermilk, white wine vinegar and caster sugar into a small jug, season with salt and pepper and whisk together. Add the chives.

Put the lettuce, sugar snap peas, red onion and capers into a large bowl and toss together gently. Add half the dressing and toss again. Flake over the hot-smoked salmon and gently toss again, then drizzle over the remaining dressing and serve.

Maple Syrup and Buttermilk Soda Bread

This bread recipe by Monica Galetti couldn’t be easier and it tastes delicious. We only attempted it to use up some buttermilk but we’ll be making it again. Great on its own or with soup or cheese and still great toasted days later.

Maple syrup and buttermilk soda bread – makes 2 loaves

  • 250g strong white bread flour, plus extra for dusting
  • 250g wholemeal flour
  • 100g fine oats
  • 100g self-raising flour
  • 3 tsp bicarbonate of soda
  • ½ tsp salt
  • 25g softened butter
  • 500ml buttermilk
  • 150g maple syrup
  • 50g honey

Preheat the oven to 190C/375F/Gas 5.

Mix all of the dry ingredients in a large bowl, then add the butter, buttermilk, maple syrup and honey to make a wet dough. Knead gently for a minute, then shape into 2 rectangles on a lightly floured baking tray. Bake for 20-30 minutes or until golden brown.

Tomato & Olive Salad

Fabulous flavours in this easy summer salad by Sabrina Ghayour. Great with barbecues – there’s still time before the cold evenings arrive.

Tomato & Olive Salad with Za’atar &  Buttermilk Dressing – serves 6 to 8

  • 800g mixed tomatoes
  • 250g pitted mixed olives
  • 15g chives, snipped
  • 200ml buttermilk
  • olive oil (Sabrina suggests a flavoured one like garlic or lemon)
  • 2 tbsp za’atar

Slice the tomatoes horizontally into 1cm-thick slices and arrange on a large platter. Spread the olives around the plate and scatter over half of the chives. Season generously with good sea salt and black pepper.

Season the buttermilk well with salt and a good slug of olive oil, the drizzle this over the salad. Scatter over the remaining chives and sprinkle over the za’atar. Serve right away.
