We chose this recipe because it has courgettes in it (and we have loads in the garden) but we’ll definitely be making it again. The method is a little different from usual but the results are lovely, fresh and tasty.

Wine Suggestion: Try to find a white wine with a lemony citrus flavour to bring out the bright flavours of the courgettes. We had a bottle of Karavitakis Assyrtiko “Nomas” from Crete that a friend had given us and it was a summery, lemony delight.

Tomato & Courgette Risotto – serves 2

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, crushed
  • ½ tsp coriander seeds, crushed
  • 200g risotto rice
  • 500ml vegetable stock
  • 200g carton passata
  • 12 cherry tomatoes, halved
  • 2 courgettes, halved and sliced
  • 2 tbsp mascarpone
  • grated Parmesan, to serve

Preheat the oven to 200C/180C fan/gas 6.

Heat 1 tbsp of the oil in a large pan over a medium heat. Add the onion and fry for about 5 minutes until softened.

Add the garlic and coriander seeds and cook for another minute, then stir in the rice and stir until coated and glistening.

Gradually add 300ml of the stock, stirring until absorbed each time before adding some more. Stir in the passata, then cover with a lid and cook gently for 10 minutes. Keep giving it a stir every couple of minutes and add more stock as needed.

Meanwhile, put the tomatoes and courgettes into a roasting tin, keeping them at separate ends. Drizzle with the other tbsp of oil, then season and roast for 10-12 minutes until just tender. You might need to scoop out the tomatoes and cook the courgettes a little longer.

Add the mascarpone to the risotto and season generously with salt and black pepper. Keep stirring and cooking for about 5 minutes more or until the rice is cooked. Add the courgettes to the risotto and stir to mix together. Serve in warm bowls with the roasted tomatoes and some grated Parmesan.

This is a perfect lunch dish – quick, easy and just a few ingredients. We made this to use up the rest of a jar of passata and cooked slightly less gnocchi to serve 3. The quantities are just a rough guide really so use up what you’ve got.

Gnocchi al pomodoro – serves 4

  • 4 tbsp extra virgin olive oil
  • 1 large red onion, peeled and finely chopped
  • 700ml passata
  • 10 basil leaves
  • 500g ready-made plain gnocchi
  • 100g grated mature Cheddar cheese

Heat the oven to 200C/180C fan/gas 6.

Warm the olive oil in a medium saucepan, then add the onion and cook for 3 minutes. Add the passata and cook for 10 minutes, stirring occasionally. Stir in the basil leaves, season with salt and black pepper and set aside.

Half-fill a large saucepan with water and bring to the boil. Add 1 tbsp of salt and the packet of gnocchi. As soon as the gnocchi start flowing to the top, scoop them out with a salted spoon and add to the sauce.

Gently stir the gnocchi into the sauce, then transfer everything to a baking dish and scatter over the grated cheese. Bake in the oven for about 10 minutes or until bubbling and golden brown.

It’s definitely a bit more like soup weather in Dublin and this one’s good and hearty!

Puy lentil and pearl barley soup – serves 6

  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 2 carrots, finely chopped
  • 2 cloves of garlic, crushed
  • 100g dried Puy lentils
  • 100g pearl barley
  • 680g jar passata
  • 1.5 litres vegetable stock
  • 2 tsp sugar
  • 1 tbsp balsamic vinegar

Heat the olive oil in a large pot, add the onion and carrots and cook over a medium heat for about 10 minutes or until softened and starting to colour.

Add the garlic, Puy lentils and pearl barley and stir for a minute, then add the passata and vegetable stock. Season with salt and black pepper.

Bring to the boil, then reduce the heat and simmer, covered, for 40-45 minutes or until everything is tender.

Add the sugar and balsamic vinegar, season again if needed, and serve.

Radiatori with Sausage & Saffron

We’re getting a new kitchen and currently trying to clear the cupboards of as many ingredients as possible to save us having to pack them away. I don’t know why we bought a bag of radiatori pasta, maybe we just liked the look of it, but a quick flick of the books turned up the perfect recipe. Do find Italian sausages if you can (we used luganega but you can often find good pork and fennel ones too) as they’re a lot denser than our traditional sausages. Gone are the days when we used to beg Italian restaurants to sell us some!

Wine suggestion: the saffron gives this dish a refinement and character a little different to some other Italian / pasta recipes and we think that the newly classic wines of the Tuscan coast, specifically Bolgheri and northern Maremma suit the dish really well. For sheer value we’d open a bottle Argentiera’s Poggio ai Ginepri which is Cabernet Sauvignon led. However, if you can stretch further then the Cabernet Franc led wines of Biserno, like their il Pino would make this dish feel like a proper event – as all Friday night dishes should be!

Radiatori with Sausage & Saffron – serves 4 to 6

  • 3 tbsp olive oil
  • a large onion, roughly chopped
  • 500g Italian sausages, remove the skins and break up the meat with your hands
  • ¼ tsp of saffron threads
  • 600ml passata
  • 500g radiatori pasta
  • basil & grated pecorino (to serve)

Warm the oil in a heavy casserole. Add the onion with a pinch of sea salt and cook over a medium-low heat for about 10 minutes or until softened.

Turn the heat up, then add the sausagemeat, keep breaking it up with your spoon if needed, and stir until it loses its raw appearance, then add the saffron and passata. Bring to a bubble and turn the heat down low and simmer gently for 40 minutes.

Place a lid on the casserole and turn off the heat, then cook the pasta in lots of boiling, salty water for the time on the packet. Reserve a few ladlefuls of pasta water before you drain it.

Tip the pasta into the sauce and toss together, adding a bit of pasta water to help it come together if needed. Serve sprinkled with basil and pecorino.
