
This is just a simple green salad but the addition of chopped green olives and red onions takes it to the next level. It’s particularly good with tomato-based dishes, like lasagne or Parmigiana.
Green salad with olive dressing – serves 6
- 1 small red onion, finely chopped
- 50g green olives, finely chopped
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 2 tsp golden caster sugar
- 6 big handfuls of mixed green salad leaves
Whisk the olive oil, vinegar and sugar together in a small bowl, then add the olives and red onion and season.
Tip the salad leaves into a bowl and drizzle over the dressing, then toss gently to coat.

I love these types of salads! When we were in Majorca, Spain, we would have something similar with fresh pomegranate! It made it fresh and delicious… so simple but loved the flavor and texture! Thanks for sharing!
