Roasted butternut squash and red onion pasta

A simple autumnal pasta dish for a tasty weeknight dinner.

Wine Suggestion:  we initially thought to open a Pinot Noir for this but hesitated because of the Parmesan and crème fraîche. We’re glad we did because the Pira Luigi Nebbiolo d’Alba was the better match. This had just the right earthiness alongside a youthful fruit (the dish isn’t too serious) plus great fresh acidity and fine tannins for the rich proteins of parmesan and cream that bring the dish together.

Roasted squash & red onion pasta – serves 2

  • 1 butternut squash, about 700g
  • 2 red onions
  • 2 garlic cloves, sliced
  • 175g penne or rigatoni
  • 3 rounded tbsp crème fraîche
  • freshly grated Parmesan, to serve

Preheat your oven to 200C/Fan 180C/Gas 6.

Peel and deseed the squash, then cut it into bite-sized chunks. Peel the onions then cut each into eight wedges. Tip the squash and onions into a roasting tin along with the sliced garlic and 2 tbsp of olive oil. Season generously with salt and pepper, then toss with your hands until everything is coated with oil. Roast for 30-35 minutes or until the veg is completely tender and browned and crispy at the edges.

Meanwhile, cook the pasta in a large pan of salted water according to the pack instructions. Drain the pasta and reserve about 4 tbsp of the cooking water. Remove the tin from the oven and stir in the the cooking water and crème fraîche. Tip in the pasta and toss well. Serve in warm bowls and sprinkle with Parmesan.

Creamy marscapone tortellini

Because we had leftover marscapone … we love using leftover ingredients. It’s ok to cheat sometimes with some shop-bought fresh tortellini and the result is dinner in minutes!

Wine Suggestion: this works with young, fresh red wines. If you feel like Italian then the Rocca delle Macie Chianti Vernaiolo which is unoaked and vibrantly full of fruit is a good choice. We, however, threw a Pike & Joyce Rapide (unoaked) Pinot Noir from the Adelaide Hills into the fridge for 30 minutes. A good match too.

Tortellini with Creamy Tomato & Mascarpone Sauce – serves 2-4

  • 1 tbsp olive oil
  • 1 garlic clove, crushed
  • 400g tin chopped tomatoes
  • 1 tsp vegetable stock powder (we never are without Marigold Swiss Bouillon) or ½ cumbled stock cube
  • 1 tbsp tomato purée
  • 1 tsp sugar
  • few basil leaves
  • 2 tbsp mascarpone plus a bit extra
  • fresh tortellni – we used spinach & ricotta

Preheat the oven to 180ºC.

Heat the oil in a pan, add the garlic and gently fry for 1 minute. Add the tin of tomatoes, the stock powder, tomato purée and sugar, then bring to the boil. Turn down the heat and simmer uncovered for 5 minutes. Tear in the basil leaves and stir in the 2 tbsp of mascarpone.

Meanwhile, cook the tortellini in boiling salted water as per the timing on the pack, then drain well and tip into a small ovenproof dish.

Pour the sauce over the tortellini and top with a few more spoonfuls of mascarpone, then bake until bubbling at the edges.

Orzo & tomato salad

A characterful and bright salad that tastes great with barbecued lamb. Easily halved.

Orzo & Tomato Salad with Capers & Kalamata Olives – serves 6 to 8

  • 350g orzo pasta
  • 2 x 290g deli packs of sunblush tomatoes, drained & cut into strips – reserve the oil
  • 400g green beans, trimmed & halved
  • 200g pitted Kalamata olives, roughly halved
  • 50g flat-leaf parsley, leaves and stems finely chopped
  • 400g feta cheese, crumbled into small chunks
  • 100g pine nuts
  • 240g capers in brine, drained

Cook the orzo according to the pack. Rinse well in cold water and leave to drain in a sieve for 10 minutes.

Put the drained orzo into a large mixing bowl. Add 2 tbsp of oil from the tomatoes and mix well.

Cook the green beans in boiling water for 6 to 8 minutes or until tender, then drain and put into a bowl of cold water to stop them cooking. Drain well.

Add the green beans to the orzo along with the rest of the ingredients and mix well. Add some more of the tomato oil and season generously with salt and black pepper.

Spinach & Courgette Lasagne

We loved this easy veggie lasagne that celebrates courgettes – one of our favourite summer vegetables. An excellent family dish for mid-week.

Wine Suggestion: We had a Bergerac blanc from Le Tap at hand from our recent holidays. It was a blend of Sauvignon Blanc, Semillon and a touch of Muscadelle and had the right kind of freshness and body.

Spinach & Courgette Lasagne – serves 6

  • 400g spinach
  • 1 tbsp olive oil
  • 2 garlic cloves, crushed
  • 250g mascarpone
  • 1 tsp ground nutmeg
  • 100g Parmesan, grated
  • 9 lasagne sheets
  • 100ml double cream
  • 3 large courgettes, sliced lengthways

Put the spinach into a colander and pour over boiling water to wilt it. Leave until cool enough to touch, then squeeze out the excess liquid with your hands.

Heat the oil in a non-stick frying pan over a medium heat, add the garlic and soften for a minute. Add the nutmeg and cook for another minute before adding the mascarpone, spinach, half the cream and half the Parmesan. Mix together and season well, then set aside.

Heat the oven to 180C/160 fan/gas 4.

Spread a third of the filling over the base of a 20 x 30 cm baking dish, cover with 3 lasagne sheets, then add a layer of courgettes. Repeat two more times. Pour the remaining cream over and sprinkle with the rest of the Parmesan.

Bake for 40-45 minutes or until the sauce is bubbling and the pasta is cooked. Rest for 5 minutes before serving.

Sicilian tuna pasta

We loved this easy pasta dish that we cooked when camping underneath Château de Beynac, right beside the banks of the Dordogne, with hot air balloons floating by. Such happy memories.

Wine Suggestion: We don’t see wines from the Dordogne often in Ireland and found ourselves a bit at sea until we found the Vinotheque de Beynac run by Enrique; young, enthusiastic, knowledgeable and who had curated a nice, boutique selection of wines. His suggestion of the Chateau Montdoyen Un Point c’est Tout! Bergerac Rosé was a great match. If you’re near Beynac et Cazenac in the Dordogne, he’s well worth seeking out for local wine inspiration.

Sicilian Tuna Pasta – serves 4

  • 300g dried pasta shells
  • 4 heaped tsp baby capers
  • 500g ripe cherry tomatoes (mixed colours if available), halved
  • 1 tbsp dried oregano
  • 1 x 220g jar of tuna in olive oil

Cook the pasta in a large pan of salty boiling water according to the time suggested on the packet. Meanwhile, put a large non-stick frying pan on a medium-high heat with 1 tbsp of olive oil. Add the capers, fry until very crispy, then scoop out with a slotted spoon and set aside. Add the tomatoes, then sprinkle in most of the oregano. Drain and flake in the tuna, add 2 ladles of the pasta cooking water, and simmer until the pasta is cooked.

Drain the pasta, reserving a little more of the cooking water, then toss the pasta into the tuna pan. Mix together and loosen with a splash of the pasta water if needed. Taste and season, then serve scattered with the crispy capers and the rest of the oregano and a drizzle of olive oil.

Linguine with Creamy Tomato, Rosemary & Caper Sauce

Super simple weeknight pasta that tastes delicious.

Wine suggestion: A youthful Sangiovese from Tuscany is our pick with the wine at hand the Rocca delle Macie Vernaiolo which we find a great unoaked and fresh red wine. We like to put it in the fridge for 30 minutes before opening at this time of the year.

Linguine with creamy tomato, rosemary & caper sauce – serves 2

  • 2 cloves of garlic, crushed
  • a pinch of chilli flakes
  • 2 tsp chopped rosemary
  • 1 tin of plum tomatoes
  • 1 tbsp capers
  • 3 tbsp double cream
  • 150g linguine
  • Parmesan, grated, to serve

Heat 1 tbsp of olive oil in a saucepan. Add the garlic and cook for a couple of minutes, then add the chilli & rosemary and cook for another minute. Add the tin of tomatoes.

Simmer the sauce for 20 minutes, squashing the tomatoes with a wooden spoon occasionally so they break down into a thick sauce. Add the capers and cream and simmer for another 3-4 minutes.

Meanwhile, cook the linguine according to the pack, then drain well. Tip the pasta into the sauce and toss together. Serve in warm bowls with some Parmesan for sprinkling over.

Spaghetti with crab, cherry tomatoes & fresh chillies

This is really simple and fresh and we love it on a Friday night with a glass of chilled white wine. By all means cook a crab but our local fish shop sells cooked and picked crabmeat which makes this extra quick and easy.

Wine Suggestion: One of our stand-by wines for seafood is Muscadet and for this dish it was a good choice. A long standing favourite, the Domaine de la Chauviniere Muscadet sur lie always has good fruit, great texture and freshness and accentuated the flavours of the crab in a very nice way.

Spaghetti with Crab, Cherry Tomatoes and Chillies – serves 4

  • 500g spaghetti
  • 8 tbsp extra virgin olive oil
  • 2 garlic cloves, finely sliced
  • 1 medium hot red chilli, deseeded and finely sliced
  • 200g cherry tomatoes, halved
  • 100ml white wine
  • 200g white crabmeat
  • 3 tbsp freshly chopped chives

Cook the pasta in a very large pot of boiling salty water until al dente.

Meanwhile, gently heat the oil in a large frying pan and fry the garlic and chilli for 30 seconds.

Add the tomatoes and cook for 2 minutes before adding the wine and bringing to a simmer. Add the crab and cook for a minute to just warm through.

Drain the pasta well and tip into the pan with the crab sauce. Stir to combine, sprinkle over the chives, and serve.

Pasta with broccoli & gorgonzola

This is particularly good with purple sprouting broccoli when it’s around. Don’t be tempted to strip off the leaves they’re just as good to eat as the florets. Hardly a recipe at all but very satisfying.

Wine Suggestion: try an Italian white from the Marches or Abruzzo. Our choice this evening was the La Piuma (feather) Pecorino Terre di Chieti; charming fruit and with little twists of nuts, herbs and citrus that played with the food in a great way.

Cheese & broccoli pasta – serves 2

  • 200g pasta (use whatever you have)
  • a bunch of purple sprouting broccoli – about 6 to 8 stems (or a head of ordinary broccoli)
  • about 250g of ripe Gorgonzola

Cook the pasta in a generous amount of boiling salty water.

Cut the broccoli into small florets and thin pieces of stalk (discard any thick woody stems).

Lightly salt another pan of boiling water and cook the broccoli for a few minutes or until tender.

Put the cheese into a large warm bowl, then add the hot drained broccoli followed by the lightly drained pasta (a bit of water will help make a sauce). Stir until melting and serve.

Lemon & basil linguine

Sometimes the simplest of ideas turn out the best.

Wine Suggestion: we had a glass of the Adi Badenhorst Secateurs Chenin Blanc which he’s now experimenting with a little bit of skin contact. We don’t disagree, it adds a touch of extra texture and complexity to such a great value wine.

Lemon & basil linguine – serves 2

  • 200g linguine
  • 1 large lemon, juiced
  • 75ml good olive oil
  • 75g Parmesan
  • a large handful of basil leaves

Put a large pan of water on to boil, add loads of salt and cook the pasta according to the time suggested on the packet.

Put the lemon juice, olive oil and Parmesan into a large warmed bowl and beat with a small whisk to combine and thicken. Tear the basil leaves into the bowl and add plenty of black pepper.

Drain the pasta and toss with the mixture in the bowl.

Big mouthfuls of flavour with this somewhat unconventional pasta dish – Italians might like to avert their eyes! The capers steal the show in some ways so you really need to like these and the spicy, garlicky chickpeas are to die for. If this dish is wrong we don’t want to be right!

Wine Suggestion: We had a glass of the Domaine de la Chauviniere Muscadet sur lie which might not be the obvious choice but it worked. Fresh and light, but with great fruit and texture, we’d highly recommend this to match the vibrant, flavour packed dish.

Orecchiette cooked in chickpea & tomato sauce – serves 4

  • 50ml olive oil, plus extra to serve
  • 6 cloves of garlic, peeled and crushed
  • 400g tin of chickpeas, drained and patted dry
  • 2 tsp hot smoked paprika
  • 2 tsp ground cumin
  • ¾ tbsp tomato purée
  • 40g parsley, leaves picked and roughly chopped
  • 2 tsp lemon zest
  • 4 tbsp baby capers
  • 80g good quality green olives, pitted and roughly torn
  • 250g cherry tomatoes
  • 2 tsp caster sugar
  • ½ tbsp caraway seeds, lightly toasted and crushed
  • 250g dried orecchiette pasta
  • 500ml vegetable stock

Put the first 6 ingredients along with 2 tsp of salt in a large sauté pan and fry gently over a medium heat for about 8 minutes, until the chickpeas are slightly crisp. Reserve about a third of the chickpeas to use as a garnish at the end.

Combine the parsley, lemon zest, capers and olives in a bowl, then add two-thirds of this to the pan with the cherry tomatoes, sugar and caraway seeds. Cook and stir for another 2 minutes.

Add the pasta and stock and bring to a simmer. Cover with a lid and cook over a medium heat for 12 minutes, undisturbed. Check the pasta is cooked and if not continue cooking for another minute or two.

Stir in the remaining parsley mixture, drizzle with 2 tbsp of olive oil and garnish with the reserved chickpeas and some black pepper.

Spaghetti with Prawns & Rocket

Easy, tasty, prawns, chilli & spaghetti 🙂

Wine Suggestion: A great match was the Biancardi Solo Fiano from Puglia which was aromatic, floral and vibrantly fresh.

Spaghetti con gamberetti e rucola – serves 4

  • 400g dried spaghetti
  • extra virgin olive oil
  • 2 cloves of garlic, peeled and finely chopped
  • 1 to 2 dried chillies, crumbled (or you could use a tsp of chilli flakes)
  • 400g raw prawns (peeled)
  • 1 small wineglass of wine – about 175ml
  • 2 heaped tbsp of sun-dried tomato purée or 6 sun-dried tomatoes blitzed in a blender
  • zest and juice of 1 lemon
  • 2 handfuls of rocket, roughly chopped

Cook the spaghetti in a large pan of salted water according to the pack.

Meanwhile, heat 3 tbsp of olive oil in a large frying pan and add the garlic and chilli.

When the garlic starts to colour, add the prawns and sauté for a minute, then add the wine and tomato purée and simmer for a couple of minutes.

Drain the pasta but reserve a little bit of cooking water.

Toss the spaghetti with the sauce, the lemon juice and half the chopped rocket and season to taste (add a bit of the pasta water at this stage if needed).

Divide between plates and scatter with rocket and lemon zest before serving.

Spaghetti with walnuts, raisins & parsley

A simple weeknight dish with very few ingredients. Typical of the type of dish we have at the end of the week when we’re determined to use what we’ve got without having to return to the shops.

Spaghetti with Walnuts, Raisins & Parsley – serves 4

  • 300g spaghetti
  • 2 tbsp olive oil
  • 2 onions, sliced
  • 5 tbsp raisins or sultanas
  • 250ml chicken or vegetable stock
  • 50g parmesan, grated
  • 5 tbsp chopped walnuts
  • small bunch flat-leaf parsley, finely chopped

Cook the pasta in boiling salted water according to the pack.

Meanwhile, heat the oil in a frying pan and cook the onions for 8 to 10 minutes or until soft and golden brown. Add the raisins and stock and cook for a few minutes until hot through. Toss with the pasta, Parmesan, walnuts and parsley.

Chianti-baked Meatballs

These smell delicious even before they go into the oven. Serve with top-quality pasta like our favourite, Martelli from Panzano in Tuscany, or potatoes roasted with rosemary.

Wine Suggestion: naturally this goes with Chianti, but feel free to adventure a bit further if you like as a good Brunello with a bit of age will make this feel a bit special despite the humble ingredients. Don’t use your best wine in the sauce though; we used a nice, but inexpensive Bordeaux which had good fruit and tannin.

Chianti-baked Meatballs – serves 4

FOR THE MEATBALLS:

  • 500g beef mince
  • 1 onion, very finely chopped
  • 2 cloves of garlic, crushed
  • 50g black olives, stoned and chopped
  • 50g fresh breadcrumbs
  • 25g Parmesan, finely grated
  • 1 egg, lightly beaten
  • 1 tsp paprika
  • 1 long red chilli, deseeded and finely chopped
  • 2-3 tbsp chopped parsley

FOR THE SAUCE:

  • 2 tbsp olive oil
  • 250ml Chianti (or other red wine)
  • 2 x 400g tins chopped tomatoes
  • 2 tsp caster sugar
  • a large handful of basil, chopped

Heat the oven to 220C/Fan 200C/Gas 7.

Mix all the meatball ingredients together in a large bowl – the easiest way is to use clean hands. When everything is mixed together really well, wet your hands and roll into small or large meatballs (aim for 12 large meatballs or 20 small ones).

Gently toss the meatballs in 2tbsp of olive oil in an ovenproof shallow casserole or roasting tray. Try to find one that is just big enough to fit the meatballs but not so they are squashed together.

Bake the meatballs for 10 minutes, then pour over the wine and turn the meatballs over to make sure they are coated. Return to the oven for another 10 minutes. Stir in the tomatoes, sugar and basil, then cook for another 20-25 minutes or until bubbling and thickened.

Serve with pasta or roast potatoes with rosemary.

Spaghetti Carbonara

A sort of carbonara-style dish but far from authentic. It’s tasty though, and we get requests for this version so we’ll keep making it.

Wine Suggestion: We opened a bottle of the Colterenzio Pinot Bianco from Alto Adige/Südtirol for our guests and it went very well. If in doubt we try to choose a wine similar to the origin of the food; a good rule if you’re stuck.

Spaghetti with Mushrooms, Bacon & Cream – serves 4

  • 350g spaghetti
  • 150g unsmoked streaky bacon, cut across into very thin strips
  • 3 tbsp olive oil
  • 150g small chestnut mushrooms, quartered
  • 2 garlic cloves, crushed
  • 2 large eggs, beaten
  • 85g Parmesan cheese, grated
  • 4 tbsp double cream
  • 1 tbsp chopped flat-leaf parsley

Cook the pasta in lots of boiling salted water according to the time indicated on the pack.

Meanwhile, heat a large, deep, non-stick frying pan and fry the bacon over a low heat until the fat starts to run. Add 1tbsp of the olive oil, increase the heat, and keep cooking for another 3-5 minutes or until crispy. Remove with a slotted spoon and drain on some kitchen paper.

Add the remaining 2 tbsp of oil to the same pan, then add the mushrooms and garlic and fry over a medium-high heat for 3-4 minutes or until the mushrooms are golden. Set aside.

Combine the eggs and most of the Parmesan in a small bowl (reserve enough cheese to sprinkle over at the end). Season well with salt and black pepper. When the pasta is almost done, return the frying pan to a low heat. Scoop out a cup of the pasta cooking water, then drain.

Tip the spaghetti into the warm pan with the bacon and mushrooms. Remove the pan from the heat and mix in the eggs and cheese. Stir in the cream and about 120ml of the reserved pasta water. Use some tongs to toss the spaghetti with the other ingredients.

Divide the spaghetti between 4 warm bowls and scatter over the parsley, reserved Parmesan and some more black pepper.

There is a rosemary bush in our front garden and it often comes to the rescue when we have pretty much nothing for dinner. Provided you have a rosemary bush at your disposal this is pretty much a store cupboard dish and also handy for using the end of a jar of cream. This is surprisingly tasty and a great throw together weeknight dish.

Wine Suggestion: this dish suits a rustic red wine with a bit of “garrigue”, the southern French earthy, herby, spice that is a bit wild and untamed. This time we opened a wine that has this in spades, the Mas Conscience “le Cas” which is 100% old vine Carignan, which is all black fruits hints of hot rocks and earth, and wild Languedoc spices. Not shy in character but a good match nonetheless.

Rigatoni with Tomato & Rosemary Sauce – serves 4

  • 4 sprigs of rosemary, leaves finely chopped and stalks discarded
  • 2 x 400g tins chopped tomatoes
  • a pinch of chilli flakes
  • 400g rigatoni or penne
  • 100ml double cream
  • 1 tsp sugar

Fry the chopped rosemary in a tablespoon of olive oil for about a minute. Stir in the tinned tomatoes and the chilli flakes, then simmer hard for 12 minutes.

Meanwhile, cook the pasta in lots of salted boiling water according to the time indicated on the pack.

Stir the double cream into the sauce along with the sugar and plenty of seasoning, then mix in the drained pasta and serve.

Broccoli & salcmon bake

This was Friday night dinner in our house. Really easy to put together, with heaps of flavour and you can even prep it up to 4 hours in advance and chill until you’re ready to bake. You could serve some salad on the side if you like but it works pretty good on its own.

Wine Suggestion: Fresh, minerally, Chardonnay is our go to wine for this. You need fresh acidity for the rich salmon and creamy sauce and a broadness on the palate to match the body of the dish. Today it’s the Ventenac Préjugés, 100% Chardonnay from a plot that exceeded the expectations and prejudices of the winemaker, being atypical Languedoc; all freshness, juiciness and minerality.

Broccoli & salmon bake – serves 4

  • 250g penne pasta
  • 300g broccoli, cut into large florets
  • 25g butter
  • 25g plain flour
  • 600ml full cream milk
  • 100g mascarpone
  • 8 sun-dried tomatoes preserved in oil, drained and thickly sliced
  • 2 tbsp small capers, rinsed (optional)
  • 10 large basil leaves, roughly torn
  • 4 fresh skinless salmon fillets
  • 50g mature cheddar, finely grated

Preheat the oven to 190C/Gas 5/170C.

Cook the pasta in plenty of boiling salted water for 6 minutes, then add the broccoli and time another 4 minutes when the water returns to the boil. Drain.

Meanwhile, put the butter, flour, and milk in a very large saucepan and heat, whisking the whole time, until it thickens enough to make a smooth sauce. Remove from the heat and stir in the mascarpone, sun-dried tomatoes, capers and basil, then add the drained broccoli & pasta and season well.

Halve the salmon fillets widthways to give you shorter stubby pieces and put into the a large baking dish in a single layer. Spoon the pasta and broccoli mixture over the top, then scatter with the cheese.

Bake for 30 minutes or until starting to bubble at the edges. Don’t be tempted to brown it too much or you will overcook the fish.

Sausage pasta

Jules has been cooking this dish for years. Far from fancy but really tasty and super quick. Also popular with kids but leave out the chilli if they’re not that way inclined.

Wine Suggestion: A robust Italian, more than likely a Sangiovese, is our wine for this type of dish. Today it was the Tenuta Sant’Alfonso Chianti.

Sausage Pasta – serves 4

  • 1 tbsp olive oil
  • 8 good quality pork sausages cut into chunks
  • 1 large onion, chopped
  • 2 cloves of garlic, crushed
  • 1 tsp chilli powder
  • 400g tin chopped tomatoes
  • 300g short pasta

Put a large saucepan of water on to boil for the pasta.

Heat the oil in a large frying pan and fry the sausages until they are nicely browned. Turn down the heat and add the onion and garlic, then cook until softened.

Stir in the chilli powder and tomatoes, then bring to the boil before turning down the heat and leaving to bubble for about 10 minutes while you cook the pasta.

Cook the pasta in the boiling water according to the pack instructions, then drain. Tip the cooked pasta into the frying pan with the saucy sausages and mix well.  Serve with crusty bread.

Penne with blue cheese sauce

We seem to have a piece of blue cheese that sits permanently on the shelf on our fridge door. It changes every week but never completely disappears and so we find ourselves constantly on the search for weeknight dinners to put it to good use. Not a bad problem to have.

Wine Suggestion: We’ve cooked dishes similar to this many times and have found they work best with white wines with body: Chardonnay, Chenin Blanc, Soave … if it has a touch of oak or richness then all to the good.

Penne with blue cheese sauce – serves 4

  • 350g penne pasta
  • 200g frozen leaf spinach
  • 85g Danish blue or other blue cheese, crumbled
  • a pinch of chilli flakes
  • 250g tub mascarpone cheese
  • 25g Parmesan, grated

Bring a large pan of salted water to the boil and cook the pasta according to the instructions on the pack, add the spinach 3 minutes before the end of the cooking time. Drain the pasta and spinach and tip into a shallow heatproof dish along with the blue cheese, chilli flakes and lots of black pepper.

Put spoonfuls of the mascarpone over the top of the pasta. Sprinkle with the Parmesan and grill for 5 minutes or until the mascarpone has melted and the top is golden. Serve with a green salad.

Orecchiette with clams and broccoli

We just love recipes like these – tastes just like holidays in Italy. So simple but truly delicious.

Wine Suggestion: A favourite: the Sartarelli Verdicchio Classico Superiore “Tralivio”, was a great match for this combining freshness and vitality with a roundness, texture, saltiness and enough body to work with some of the strong components of this dish.

Orecchiette with clams & broccoli – serves 4

  • 1kg clams, washed
  • 300g broccoli
  • 3 garlic cloves, peeled and finely chopped
  • 1 fresh hot red chilli, seeds removed and chopped
  • 1 tbsp flat leaf parsley leaves, chopped
  • 1 crumbled dried hot chilli or 1 tsp dried chilli flakes
  • 3 anchovy fillets
  • 150ml white wine
  • 300g orecchiette

Cut the florets from the broccoli head and discard the stalks. Cut each floret in half lengthwise.

Cook the broccoli in boiling salted water until very tender, then drain.

Heat 2 tbsp olive oil in a heavy frying pan. Add half the garlic and fry until soft, then add the anchovies and dried chilli, Stir to melt the anchovies. Add the broccoli and cook for 10 minutes or until it is soft enough to break up into a sauce.

Heat 2 tbsp of olive oil in a large pan. Add the fresh chilli, the rest of the garlic, and the parsley. Fry until just coloured. Add the clams and wine, then cover and cook over a high heat until the clams have opened, about 3 minutes. Drain and reserve the liquid.

Remove the clams from their shells and add them to the broccoli sauce with some of their cooking water to thin the sauce a bit.

Cook the orecchiette in boiling salted water until al dente. Drain and add to the sauce, adding some more liquid as needed.

Serve with your best olive oil.

Spaghettini w. prawns basil parsley and pistachios

We know it’s Sunday and it’s getting colder and the clocks have changed, so we should really be posting a nice roast. However, we figure you probably have dinner sorted for today and you might like something to inspire you later in the week.

Wine Suggestion: the fresh, zesty Staforte Soave from Gaziano Prà would be a great match for this. Made from 100% Garganega it has apricot, peach and apple fruit flavours with touches of camomile and white flowers; followed by a textural finish. We would also try southern Italian Greco di Tufo and Falanghina’s with this dish; try to look for something with crispness, mid-weight and mineral texture and it should work.

Spaghettini with prawns, basil, parsley & pistachios – serves 4

  • 1 clove of garlic
  • ½ tsp sea salt
  • a large handful of basil leaves
  • a large handful of flat-leaf parsley leaves
  • a large handful of mint leaves
  • 75g roasted unsalted pistachio nuts
  • 1 tbsp finely grated parmesan
  • 1 tbsp lemon juice
  • 60ml extra virgin olive oil
  • 400g dried spaghettini
  • 500g raw peeled king prawns

Pound the garlic and half the sea salt to a paste with a pestle and mortar. Add the basil, parsley and mint and keep pounding together to make a thick paste. Add half the pistachios and grind them into the paste to get a creamy texture. Roughly chop the rest of the pistachios and stir into the paste with the Parmesan, lemon juice and 2 tbsp of the olive oil. Season with some more salt if needed and black pepper.

Meanwhile, bring a large saucepan of salty water to the boil and cook the pasta until al dente.

Put a heavy-based frying pan over a high heat and add the rest of the olive oil. Fry the prawns for a minutes on each side, then season with the remaining ¼ tsp of sea salt. Remove from the heat.

Drain the pasta and keep a little of the cooking water. Immediately tip the pasta back into the pot, then toss together with the herb paste and cooked prawns. Add a little of the pasta cooking water if necessary to loosen. Serve immediately on warm plates.
