Spiced Garlic Savoy Cabbage

It’s nice to do something different with greens now and then. This rich, garlicky and full of flavour cabbage dish goes really well with lamb. We also liked it served with a few other veggie dishes. You could of course use other varieties of green cabbage.

Spiced Garlic Savoy Cabbage – serves 4 to 6

  • 1 large head of Savoy cabbage, halved, core removed and leaves cut into ribbons
  • 2 tsp cumin seeds
  • 2 tsp coriander seeds
  • 2 tsp mustard seeds
  • 2 tsp nigella seeds
  • 1-2 tsp nigella seeds
  • 1 tsp chilli flakes
  • 1 whole head of garlic, cloves bashed and thinly sliced
  • 50g unsalted butter, cut into cubes
  • 6 tbsp Greek yoghurt

Wash and drain the cabbage but don’t bother to shake off the water as this will be used to steam it.

Heat a large frying pan over a medium-high heat, add the spices and dry-roast for a minute, shaking, until they smell aromatic and are starting to brown.

Add enough olive oil to just coat the base of the pan. Add the garlic and fry for a minute, then put half the cabbage into the pan. Season with a little salt and pepper and stir well before adding the rest of the cabbage and seasoning lightly again. Drizzle over a little oil, then cover with a lid and cook for 3-4 minutes or until tender.

Stir the cabbage well to coat in the spices, then add the butter and stir. Check the seasoning, then take the pan off the heat and stir through the yoghurt.

Roasted Beetroot Salad with Burnt Chestnuts

We can’t help but associate chestnuts with December when everyone’s in holiday mood. This side dish would complement any banquet and would even work well on the big day as an alternative to carrots and sprouts (not that there’s anything wrong with them). Another great idea from Sabrina Ghayour.

Roasted Beetroot Salad with Burnt Chestnuts, Tahini Yoghurt & Herb Oil – serves 4

  • 1.5kg beetroot, roasted and peeled, quartered (roast beetroots wrapped in foil for between 45 to 90 minutes or until soft when pierced with a knife)
  • 200g vacuum packed cooked chestnuts

FOR THE YOGHURT SAUCE

  • 3 tbsp tahini
  • 100g Greek-style yoghurt
  • 2-3 tbsp olive oil
  • 1-2 tbsp warm water

FOR THE HERB OIL

  • 15g dill
  • 15g coriander
  • a good squeeze of lemon juice
  • finely grated zest of 1 lemon
  • 5 tbsp olive oil

TO GARNISH

  • toasted sesame seeds
  • toasted nigella seeds

Arrange the beetroot quarters over a large platter.

Heat a large frying pan over a high heat, then dry fry the chestnuts for a couple of minutes on each side or until slightly blackened. Arrange the chestnuts on the platter with the beetroot.

Make the herb oil by pouring boiling water into a bowl and immersing the dill and coriander in it. Leave to blanch for 1 minutes before draining and then cool the herbs by running under cold water.

Blitz the herbs in a blender with the squeeze of lemon juice, the lemon zest, olive oil and some salt and pepper. Blend to a smooth mixture, adding more oil to loosen if needed. Adjust the seasoning and set aside.

Combine the ingredients for the yoghurt sauce together and add enough warm water to make a smooth sauce. Drizzle the yoghurt sauce over the beetroot. Spoon over the herb oil and sprinkle with the toasted seeds to garnish.

Veg Stew with saffron, curry & parmesan cream

It’s not too often that we taste something that is nothing like anything we’ve had before but that’s what happened with this dish. A deeply savoury, packed with umami flavours, and very satisfying veggie dish. We were a bit suspicious of the Parmesan cream but it’s exactly what the stew needs to enrich it. Great stuff!

Wine Suggestion: This is a great match for a dry Oloroso Sherry with it’s nuttiness and umami characters playing an extra chorus alongside these interesting flavours in the stew. If Sherry is not your thing look for a good northern-Rhône white; our current favourite is the Domaine Coursodon Etincelle, an unclassified Roussanne-Viognier blend that is textured, purfumed and complex.

Vegetable stew with saffron, curry & Parmesan cream – serves 4

  • 4 cloves of garlic, save one clove and finely chop the rest
  • 1 onion, diced
  • olive oil or butter for frying
  • 200g celeriac, peeled and diced into 1cm cubes
  • 3 potatoes, peeled and diced into 1cm cubes
  • a pinch of saffron
  • 2 tsp medium curry powder
  • 2 x 400g tins cherry tomatoes
  • Parmesan rind
  • 400g tin butter beans, rinsed and drained
  • 4 slices of multigrain bread
  • a handful of mixed herbs, e.g. flat-leaf parsley, basil or dill, chopped
  • 1 tbsp miso
  • 1 tsp runny honey
  • a pinch of dried chilli flakes

FOR THE PARMESAN CREAM

  • 100g mayonnaise
  • 4 tbsp finely grated Parmesan

Fry the onion in the oil or butter over a low-medium heat for 5 minutes or until soft. Add the celeriac and chopped garlic, turn up the heat and fry for a few minutes.

Add the potatoes, spices, tomatoes, cheese rind, 600ml of water and plenty of seasoning. Cover with a lid and simmer for 10-15 minutes. Add the beans and simmer for another 10-15 minutes or until the potatoes are tender.

Meanwhile, cut the garlic clove in half and rub the cut edges on the slices of bread. Sprinkle the herbs on top and fry in oil and/or butter in a frying pan until golden.

Combine the mayonnaise and Parmesan in a bowl to make the Parmesan cream.

Remove the cheese rind from the stew and season with the miso, honey, chilli flakes and check for seasoning.

Serve the stew with the fried bread and Parmesan cream on the side.

Cheesy Jacket Potatoes with Sweetcorn & Roasted Peppers

Weeknight dinners in our house largely consist of dishes constructed from whatever happens to be lying in the fridge after the weekend. We rarely go shopping mid-week and consequently rarely waste food. This week we had some tinned El Navarrico Piquillo peppers which we had used in a paella. These are fabulous, but not cheap, and don’t keep for long once opened. We used them to stuff some jacket potatoes with a bit of cheddar cheese, the last of the chives in the garden and the dregs from a tin of sweetcorn leftover from sandwich filling for school lunchboxes. Serve with any salad leaves you have in the fridge drawer. Also a suitable filling for a quesadilla!

Wine Suggestion: a juicy Garnacha from Spain to match the mid-week casual dinner and the smoky Piquillo peppers

Cheesy jacket potatoes with sweetcorn and roasted peppers – serves 4

  • 4 x 200g floury potatoes – roosters work well
  • 175g mature Cheddar cheese, grated
  • 100g sweetcorn, either defrosted if frozen of drained if from a tin
  • 1 roasted red pepper (from a jar or tin), diced
  • 1 tbsp snipped chives
  • lightly dressed green salad, to serve

Preheat the oven to 200C/400F/Gas 6.

Pierce the potatoes a couple of times with a fork and rub all over with a little olive oil and salt. Bake for about 1 hour, until soft.

Taking care not to burn yourself, cut the potatoes in half. Use a spoon to scoop out the potato from the middle but don’t break the skins. Put the scooped out potato into a bowl.

Use a fork to mash the potatoes, then add 100g of the cheese with the sweetcorn and roasted pepper and mix well. Season to taste and stir in the chives.

Arrange the potato skins on a baking tray and scoop the potato mixture into them. Sprinkle over the rest of the cheese and bake for 15-20 minutes, until golden.

Serve with some extra chives over the top and a green salad on the side.

Rosemary and cheese straws 1

Who knew cheese straws could be so tasty? These are a great freezer standby to pull out and bake as needed and they work perfectly with pre-dinner drinks. They are definitely best served warm so don’t bake until your guests have arrived and have drinks in hands.

Wine Suggestion: Champagne and if not in your budget, a really good sparkling with a bit of time on the lees. We don’t know anyone who refuses this combination!

Rosemary & Cheese Straws – makes 36

  • 2 egg yolks
  • 2 tsp Dijon mustard
  • 375g pack of ready-rolled all-butter puff pastry
  • 3 tbsp roughly chopped rosemary, plus a bit extra
  • 100g gruyère or emmental, finely grated
  • 2 tbsp finely grated Parmesan
  • sea salt, for sprinkling

Preheat the oven to 200C/Fan 180C/Gas 6.

Mix 1 egg yolk with the mustard and stir until smooth, then set aside.

Lightly flour a work surface and open out the pastry, then prick all over with a fork. Brush the egg and mustard mixture over the pastry.

Sprinkle the rosemary over the pastry, followed by the cheeses and lightly press into the pastry. Cut the pastry sheet in half lengthways, then cut each length widthways into 2cm wide strips. Twist the strips gently.

Put the straws onto two large non-stick baking trays or trays lined with parchment. Press the ends of each twist onto the tray. Beat the remaining egg yolk with a teaspoon of water and brush over the twists, then sprinkle with the additional rosemary and sea salt. Bake for 12 to 15 minutes or until puffed and golden. Transfer to a wire rack to cool a little but serve while still warm.

To Freeze: Make the straws up to the point of twisting, then arrange on a large baking tray and freeze, uncovered, until solid, then pack into a freezer-proof box. To serve, remove from the freezer and glaze with the egg yolk (as above) and bake from frozen for 12 to 15 minutes.

Fennel & orange salad

We had this as a side dish with pork but it would also work well as a fresh starter or with oily fish.

Fennel & Orange Salad – serves 4

  • 2 fennel bulbs
  • 3 oranges
  • 25g hazelnuts
  • small bunch of mint leaves
  • small bunch of basil leaves
  • small bunch of oregano leaves (optional)

FOR THE DRESSING

  • 3 tbsp olive oil
  • juice of ½ lemon
  • 1 tsp red wine vinegar
  • ½ tsp mustard

Trim the base and stalks off the fennel but keep any feathery fronds. Slice the fennel as thin as you can – we use a mandolin for this. Put the slices in a bowl of iced water until ready to serve.

Top and tail the oranges, then cut the skin and membrane off with a sharp knife. Reserve the peel and slice the oranges thinly, removing the seeds, then arrange over a large plate.

Toast the hazelnuts in a dry frying pan until they have coloured and smell good. Rub the skin off with a clean tea towel if needed, then crush lightly into large pieces.

Make the dressing by putting the olive oil, lemon juice, vinegar and mustard into a large bowl. Squeeze any juice from the pieces of orange peel, then season well with salt and pepper and whisk together. Drain the fennel and add to the dressing. Mix well and pile on top of the orange slices. Sprinkle over the hazelnuts, herbs and fennel fronds.

Spiced lentil soup

We have what you might call a well-stocked cupboard but the problem with bulging cupboards is that it’s easy to forget what’s in there. Every now and then we make a list and search for recipes to use things up which is how we came to make this soup – perfect for lunch on chilly days.

Spiced Lentil Soup – serves 4

  • a knob of ginger, grated
  • 1 tsp cumin seeds
  • a pinch of chilli flakes
  • 1 onion, finely chopped
  • 2 large carrots, grated
  • 150g red lentils
  • 1 litre vegetable stock
  • a squeeze of lime
  • coriander leaves, to serve

Heat a little oil in a large pan and fry the ginger, cumin seeds and chilli flakes for a couple of minutes.

Add the onion and carrots and cook for 5 minutes, then add the lentils and vegetable stock. Bring to the boil, then simmer until the lentils are tender.

Blend until smooth or leave chunky, then stir through a squeeze of lime.

Serve with some fresh coriander leaves if you have them.

Herb & pak choi salad

We really liked this fresh and vibrant salad by Melissa Helmsley. It went really well with this Korean chicken but we also thought it would be nice with barbecued meat or fish with Asian flavours or Salmon Teriyaki.

Herb & Pak Choi Salad – serves 4 as a side

  • 4 large large heads of pak choi, shredded
  • 1 large Little Gem or Cos lettuces, finely shredded
  • a large handful of fresh coriander, roughly chopped
  • a large handful of fresh mint, roughly chopped
  • a large handful of fresh Thai basil, roughly chopped
  • 4 scallions, finely sliced

FOR THE DRESSING:

  • juice and grated zest of 1½ limes
  • 6 tbsp sesame oil (not toasted) or extra-virgin olive oil
  • 1 tsp raw honey or maple syrup
  • 2 tbsp tamari (or you could use light soy sauce)

TOPPING:

  • a large handful of almonds, cashews or sesame seeds (or a mixture)

Make the topping first by toasting the nuts and/or seeds in a dry frying pan with a little salt over a medium heat until golden.

Whisk the ingredients for the dressing together in a large bowl and season to taste.

Put the pak choi, lettuce and herbs in a bowl and mix with the scallions. Add the dressing and toss until everything is coasted. Sprinkle over the toasted nuts and seeds to serve.

Ginger & Miso Soup

Pumpkins are everywhere and the evenings have got dark and chilly. This delicious soup by Melissa Hemsley looks like sunshine and tastes warm and comforting. Don’t omit the topping as it really brings the soup to life.

Ginger miso sunshine soup – serves 6

  • 1 tbsp coconut oil or ghee
  • 2 large onions, roughly chopped
  • 4 garlic cloves, roughly chopped
  • 5cm piece of ginger, chopped
  • 1 tsp ground turmeric
  • 4 large carrots, chopped into 1.5cm cubes
  • 1 medium butternut squash, peeled, deseeded and chopped into 2cm cubes
  • 1.5 litres stock or bone broth or water – we used Marigold Bouillon powder
  • 2 tbsp miso
  • juice of 1 lemon

CHIVE TOPPING

  • 1 fresh red chilli, deseeded and finely chopped
  • 4 tbsp chives, chopped
  • 4 tbsp sunflower seeds
  • 4 tbsp extra-virgin olive oil

Melt the oil in a large, wide saucepan. Add the onions and cook over a medium heat for 4 minutes, then add the garlic, ginger and turmeric and cook for another minute.

Add the carrots & squash, followed by the stock. Bring to a simmer, then cover with a lid and cook for 15-18 minutes until the vegetables are tender.

Meanwhile, mix all the ingredients for the topping in a small bowl. Add the miso and lemon juice to another bowl and add a few tablespoons of the hot liquid from the soup and stir or whisk until you have a smooth paste.

Remove the soup from the heat and stir in the miso paste. Blend the soup until smooth and season to taste. Serve with the chive topping.

Mushroom Pullao - Khumbi pullao

A gently spiced rice dish flavoured with mushrooms. The perfect accompaniment to a meat curry.

Mushroom Pullao (Khumbi pullao) – serves 6

  • 450ml long-grain rice (use a jug to measure)
  • 1.2 litres plus 600ml of water
  • 150g mushrooms, sliced into 3mm thick slices
  • 1 small onion, peeled and sliced very thinly
  • 3 tbsp vegetable oil
  • 1 clove of garlic, peeled and finely chopped
  • ½ tsp peeled, finely grated fresh ginger
  • ¼ tsp garam masala
  • 1 tsp salt

Wash the rice in several changes of water, then drain. Put the rice in a bowl with the 1.2 litres of water and leave to soak for 30 minutes, then drain.

Heat the oil in a heavy pot over a medium-high heat. When hot, add the onions and garlic and stir-fry for about 2 minutes or until the onions start to brown at the edges. Add the mushrooms and stir for another 2 minutes, then add the rice, ginger, garam masala and 1 tsp of salt. Turn the heat to medium-low, then stir and sauté the rice for 2 minutes.

Pour in the 600ml of water and bring to a boil. Cover very tightly, turn the heat to very, very low and cook for 25 minutes. Remove from the heat and sit, covered and undisturbed for another 5 minutes.

Spicy Green Beans - Madaledar sem

These green beans are full of Indian flavour and make a great side for curries and other Indian dishes but they would also add interest to a roast chicken. Chopping them up small changes the texture in a nice way too.

Spicy Green Beans (Masaledar sem) – serves 6

  • 750g green beans, trimmed and cut into 5mm lengths
  • 4cm piece fresh ginger, peeled and coarsely chopped
  • 10 cloves of garlic, peeled
  • 350ml water
  • 5 tbsp vegetable oil
  • 2 tsp cumin seeds
  • 1 dried hot red chilli, lightly crushed in a mortar
  • 2 tsp ground coriander
  • 2 medium tomatoes, peeled and finely chopped (to peel the tomatoes drop into boiling water for 15 seconds after which the skins should come off easily)
  • 3 tbsp lemon juice, or to taste
  • 1 tsp ground, roasted cumin seeds

Put the ginger and garlic into a blender or food processor with 120ml of the water and blend until fairly smooth.

Heat the oil in a wide, heavy pot over a medium-high heat. When hot put in the cumin seeds, and 5 seconds later the crushed chilli. As soon as it darkens add the ginger-garlic paste, then stir and cook for a minute. Stir in the coriander, then add the chopped tomato. Stir and cook for 2 minutes, mashing the tomatoes with the back of a spoon.

Add the beans, about 1¼ tsp salt and the rest of the water, then bring to a simmer. Cover, turn the heat to low, and cook for 8-10 minutes or until the beans are tender.

Remove the cover. Add the lemon juice, the ground roasted cumin seeds, and plenty of freshly ground black pepper. Increase the heat and boil away the liquid while gently stirring the beans.

Akhrote ka raita

We’re sad to say that we’ve finally used up the enormous stash of walnuts we couldn’t resist at a French market. When we got home we thought we’d never get through them. This dish was a fitting end for the last few handfuls and we need to plan another trip. Try this raita with Indian dishes as a refreshing change from the usual cucumber raita.

Yoghurt with walnuts & coriander (Akhrote ka raita) – serves 6

  • 600ml plain yoghurt
  • 2 tbsp finely chopped coriander
  • ½ a fresh hot green chilli, very finely chopped
  • 1 scallion, very finely sliced
  • 65g shelled walnuts, roughly broken into small pieces

Put the yoghurt into a bowl and beat lightly with a fork or whisk until smooth and creamy.

Add the rest of the ingredients plus a good grinding of black pepper and about ½ tsp of salt. Stir to mix.

Cucumber & lamb's lettuce salad

We’ve been eyeing up lots of recipes in Ottolenghi Simple and so far have only made a green salad. As green salads go however it was  pretty good with a great fresh flavour from the herbs and cucumber and an unusual dressing. We served this with some spiced baked salmon but it would be great with loads of dishes.

Cucumber & lamb’s lettuce salad – serves 4

  • 5 baby cucumbers (or 1½ regular cucumbers with the seeds removed)
  • 30g lamb’s lettuce
  • 10g picked mint leaves
  • 10g picked coriander leaves
  • 1 tsp nigella seeds

FOR THE DRESSING

  • 1 tbsp lemon juice
  • 1 small garlic clove, crushed
  • 2cm piece of ginger, finely grated
  • 20g plain yoghurt
  • third tsp flaked sea salt

Make the salad dressing by whisking all of the ingredients together in a small bowl.

Cut the cucumbers into quarters, lengthways. Cut each quarter diagonally into ½ cm slices and put into a large bowl with the lettuce, mint and coriander. Gently mix in the dressing and spread into over a large shallow bowl. Sprinkle with the nigella seeds and serve.

Cheesy broccoli baked potatoes

These are great for a mid-week dinner with a salad or you could serve alongside a meat dish. Absolute comfort food.

Cheesy Broccoli Baked Potatoes – serves 4

  • 4 baking potatoes
  • 300g broccoli, cut into small florets
  • 1 tbsp grain mustard
  • 1 egg, beaten
  • 140g grated Cheddar
  • a generous lump of butter

Heat the oven to 220ºC.

Rub a little bit of oil over the potato skins and place in the oven on a baking tray for 20 minutes. Turn the heat down to 200ºC and continue to bake for 45 minutes to 1 hour or until tender.

Meanwhile, steam the broccoli for a few minutes and drain well.

Cut the potatoes in half lengthways and scoop the insides into a bowl or pot. Mash the cooked potatoes with a fork, then stir in a generous lump of butter, the mustard, egg, most of the cheese and broccoli. Season, then pile back into the shells. Sprinkle with the reserved cheese and bake for 15 minutes or until the tops are crisp and golden. Serve with salad.

Roasted butternut squash & red onion with tahini & za'atar

A divine vegetable dish from Yotam Ottolenghi & Sami Tamimi’s bookJerusalem’ – still one of our absolute favourites. We served this on a platter as a light starter but it would also work really well as a vegetarian/vegan main or as a side with other dishes. There were happy diners at our table!

Wine Suggestion: this worked excellently with Massaya’s le Colombier from the Beqaa Valley in Lebanon, a very Rhône blend with a touch of  Tempranillo which gives it hints of North African / Eastern spices.

Roasted butternut squash & red onion with tahini & za’atar – serves 4

  • 1 large butternut squash, cut into wedges (about 2cm x 6cm)
  • 2 red onions, cut into wedges
  • 50ml olive oil
  • 3½ tbsp light tahini paste
  • 1½ tbsp lemon juice
  • 1 small garlic clove, crushed
  • 30g pine nuts
  • 1 tbsp za’atar
  • 1 tbsp roughly chopped flat-leaf parsley

Preheat your oven to 240C/220C fan/Gas 9.

Put the squash and onion wedges into a large mixing bowl and toss with 3 tbsp of oil, 1 tsp of sea salt flakes and some black pepper. Spread out on a baking sheet with the skin facing down and roast in the oven for 30 to 40 minutes or until the vegetables are cooked through and starting to crisp and brown at the edges, leave to cool.

Make the sauce by putting the tahini into a small bowl with the lemon juice, 2 tbsp of water, the garlic & ¼ tsp of sea salt. Whisk until the sauce is “the consistency of honey”. You may need to add more water or tahini.

Pour the rest of the oil into a small frying pan and warm over a low-medium heat. Add the pine nuts with ½ tsp of sea salt and cook for 2 minutes, stirring, until golden brown. Remove from the heat and pour the nuts and oil into a bowl so that they stop cooking.

Spread the vegetables out on a serving platter and drizzle over the tahini. Sprinkle with the pine nuts and their oil, the za’atar and parsley.

Green couscous and roasted veg with black garlic and preserved lemon

Black garlic is a revelation and we’ll definitely use it again after this dish – sweet and mellow with lots of flavour but none of the harshness associated with white garlic. This is a great crowd pleaser by Sabrina Ghayour with lots of fresh flavours and bright colours. We served with spicy roast salmon but it would be great with meat dishes too.

Green couscous & roasted veg with black garlic & preserved lemons – serves 6 to 8 as a side

  • 2 courgettes, halved lengthways and sliced into 1cm thick half moons
  • 1 red pepper, cut into 2.5cm squares
  • 1 yellow or green pepper, cut into 2.5cm squares
  • 2 red onions, halved and sliced into 1cm thick slices
  • 300g couscous
  • 6 to 8 preserved lemons, thinly sliced into rounds
  • 1 head of black garlic, cloves thinly sliced

FOR THE HERB OIL:

  • 50g flat parsley, leaves and stems roughly chopped
  • 50g coriander, roughly chopped
  • olive oil

Preheat the oven to its highest setting and line a large baking tray with baking paper.

Put the courgettes, peppers & onions into the baking tray. Drizzle with a good amount of olive oil and season with salt and black pepper. Use your hands to make sure the vegetables are all coated with the oil, then spread them out evenly on the tray. Roast for 15 minutes, or until nicely browned.

Prepare the couscous according to the instructions on the pack, then separate the grains with a fork.

To make the herb oil, use a mini food processor or stick blender to blitz the herbs with enough olive oil to make a smooth herb oil – a few tablespoons. Season generously with salt and then stir the herb oil through the couscous. Finally, stir in the roasted veg, preserved lemons and black garlic. Serve hot or at room temperature.

Marinated mushrooms with lemon

These mushrooms, from Claudia Roden’s fantastic book The Food of Spain, are served cold and make a great nibble to serve with drinks. Some bread and olives would be good too.

Wine Suggestion: Jono purchased a bottle of the delicious Valdespino Inocente Fino Sherry from a friend and this was the perfect Tapas dish to go with it.

Champiñones marinados – serves 4

  • 500g button mushrooms
  • juice of 1 lemon
  • grated zest of ½ a lemon
  • 5 tbsp extra virgin olive oil
  • 2 tbsp chopped flat-leaf parsley

Wipe the mushrooms clean with some damp kitchen towel. Trim the stems and cut into halves or quarters.

Heat the mushrooms in a large, non-stick frying pan, over a medium heat for 10-12 minutes, stirring until they release their juices and the juices have evaporated.

Mix the lemon juice & zest with the oil and some salt and pepper in a wide, shallow bowl. Add the hot mushrooms to the bowl and mix well.

Cool, then cover and refrigerate for at least 5 hours (or you can make a day ahead). Serve at room temperature with the parsley sprinkled over.

Roasted butternut squash and red onion pasta

A simple autumnal pasta dish for a tasty weeknight dinner.

Wine Suggestion:  we initially thought to open a Pinot Noir for this but hesitated because of the Parmesan and crème fraîche. We’re glad we did because the Pira Luigi Nebbiolo d’Alba was the better match. This had just the right earthiness alongside a youthful fruit (the dish isn’t too serious) plus great fresh acidity and fine tannins for the rich proteins of parmesan and cream that bring the dish together.

Roasted squash & red onion pasta – serves 2

  • 1 butternut squash, about 700g
  • 2 red onions
  • 2 garlic cloves, sliced
  • 175g penne or rigatoni
  • 3 rounded tbsp crème fraîche
  • freshly grated Parmesan, to serve

Preheat your oven to 200C/Fan 180C/Gas 6.

Peel and deseed the squash, then cut it into bite-sized chunks. Peel the onions then cut each into eight wedges. Tip the squash and onions into a roasting tin along with the sliced garlic and 2 tbsp of olive oil. Season generously with salt and pepper, then toss with your hands until everything is coated with oil. Roast for 30-35 minutes or until the veg is completely tender and browned and crispy at the edges.

Meanwhile, cook the pasta in a large pan of salted water according to the pack instructions. Drain the pasta and reserve about 4 tbsp of the cooking water. Remove the tin from the oven and stir in the the cooking water and crème fraîche. Tip in the pasta and toss well. Serve in warm bowls and sprinkle with Parmesan.

Risotto bianco with pesto

It’s anything with pesto in our house at the minute. This dish is definitely suitable for adults too.

Wine Suggestion: We would suggest a good Fiano from Campani in the south of Italy with  freshness and fruit that isn’t too ripe and tropical. By avoiding over-ripeness you get more stone fruit with a fresh vibrancy. Alongside the rich risotto and herby pesto it’s a great match.

Risotto Bianco with Pesto – serves 6

  • 1.1 litres hot chicken or vegetable stock
  • 2 tbsp olive oil
  • a knob of butter
  • 1 large onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • ½ a head of celery, finely chopped
  • 400g risotto rice
  • 2 wineglasses of dry white vermouth or dry white wine
  • 70g butter
  • 115g freshly grated Parmesan
  • fresh pesto
  • small handful of pine nuts – toasted
  • small basil leaves (to serve)

Put the olive oil and knob of butter into a pan, then add the onion, garlic and celery, and cook gently for about 15 minutes without colouring. When the vegetables have softened turn the heat up and add the rice.

Keep stirring for about a minute or until the rice looks translucent. Add the vermouth and continue to stir.

When the vermouth has disappeared, add a ladle of the hot stock and a good pinch of salt. Turn the heat down to a simmer and keep adding ladles of the stock, stirring all the time, allowing each ladleful to be absorbed before adding another. This should take about 15 minutes. After this taste the rice to check if it’s cooked. If not, keep adding stock until the rice is soft with a little bite. If you run out of stock you can add a some boiling water. Season.

Remove the risotto from the heat and add the butter and Parmesan. Stir well, then cover the pan and leave to sit for 2 minutes. Eat immediately garnished with a spoonful of fresh pesto, some toasted pine nuts, a few basil leaves and some extra Parmesan.

Chopped Salad

Anna Jones refers to this as her all-time favourite chopped salad and we think it might be ours too!

Chopped salad with honey dressing – serves 4

  • 2 carrots, peeled
  • ½ cucumber
  • 6 radishes
  • 100g seeds toasted (we used a mix of sunflower & pumpkin seeds)
  • 4 scallions
  • 12 cherry tomatoes
  • 2 little gem lettuces
  • a few sprigs of mint, leaves picked
  • a few sprigs of basil, leaves picked

FOR THE DRESSING:

  • ½ tsp mustard
  • ½ tsp runny honey or maple syrup
  • a splash of red-wine vinegar
  • a big splash of extra-virgin olive oil

Use your biggest chopping board and start by roughly chopping the carrot, cucumber and radishes, then sprinkle over the seeds.

Next chop the scallions, tomatoes, little gem and mint together then mix everything on the board together.

Make the dressing in a bowl, then pour over the salad and mix again. Season and tip into a big bowl.
